Cold Pesto Pasta with Cherry Tomatoes and Mozzarella

Recipe  

Ingredients:  
8 ounces pasta (fusilli, penne, or bowtie)  
½ cup basil pesto  
1 cup cherry tomatoes, halved  
½ cup fresh mozzarella, diced or in small balls  
¼ cup chopped fresh basil  
Salt and pepper to taste  
1 tablespoon olive oil  

Instructions:  
Cook the pasta according to package instructions, then drain and rinse under cold water to cool. In a large bowl, toss the cooled pasta with basil pesto, cherry tomatoes, mozzarella, fresh basil, olive oil, salt, and pepper. Mix until evenly coated. Chill for at least 30 minutes before serving to let the flavors blend.
