Recipe  

Ingredients:  
8 rice paper wrappers  
1 avocado, sliced  
1 cup julienned carrots  
1 cup julienned cucumber  
1 cup shredded lettuce or cabbage  
¼ cup fresh cilantro or mint  
½ cup cooked vermicelli noodles (optional)  
Soy sauce or peanut dipping sauce  

Instructions:  
Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until soft, then place it on a clean surface. Layer a few slices of avocado, carrots, cucumber, lettuce, and herbs in the center. If using, add vermicelli noodles for extra texture. Fold the sides of the rice paper over the filling, then roll tightly from the bottom up. Repeat with the remaining wrappers. Serve with soy sauce or peanut dipping sauce.
